Deputy General Manager, Mark Pielesz helped us launch the Brasserie in May 2008. Under his stewardship it has gone from strength to strength. Wine is his forte. Our wine list is testimony to his passion and expertise, and was shortlisted for the Louis Roederer wine list of the year 2011. Restaurant Manager, Jane Fox, has been with the BridgeHouse for 20 years. We love the fact that she knows so many of you and there's nothing she doesn't know about the business. Hubby, Colin, completes the team on the bar every Saturday night.
Further proof that this is truly a family business, our kitchen team is led by Mark's brother, our Heston Blumenthal in waiting, Stephen Pielesz. Trained at the Michelin Star rated, Chewton Glen he went on to work at the Bath Spa and Bowood Golf & Country Club before joining us. Since taking over the top job at the Brasserie over a year ago, Steve has revolutionised the menu culminating with our national headline grabbing dish - the 'All Day Snail Breakfast' - proof that it's still possible to invent a totally original dish from scratch. Steve is hands-on unlike so many celebrity chefs who are rarely seen at the stoves unless there's a camera in sight. Take a peek through the kitchen window on the way to the restaurant.
